I thought long and hard about whether such a new book should be included but having cooked solidly from it since I received my review copy and being possessed of a gut feeling that this book will be left to my daughter in my will (alongside several hundred other select choices) means that here it is, standing alongside LaGrigson, Lawson and Le Villas. Olia Hercules is Ukrainian and was born in Kakhovk and her book celebrates a familial rich cultural diversity, a "messy geopolitical mosaic" (her words) with its Siberian, Moldovan, Jewish, Uzbekistani and Ossetian roots. Her book and writing bears a richness that transcends these geopolitical boundaries.

Ukrainian food wasn't on my radar until this book - and now it's all I want to eat. Lots of walnuts, lots of herbs, lots of citrus. Heavenly.

Opens up a totally unfamiliar (to me) cuisine. Her pickle recipes are absolutely outstanding.
