Simon Haigh is the Food and Beverage Director, Eden Hotel Collection a role which he has been in for the last three years which involves looking after a private portfolio of 8 hotels with 10 kitchens. Prior to this Simon was the head chef at Mallory Court ( part of the Eden Hotel Collection ) where he gained a Michelin star in 2001 and retained this for 12 years before changing to his current role. Simon joined Mallory Court Hotel as head chef in December 2001, and before this was the head chef at Inverlochy Castle in Scotland, where he also had gained a Michelin star and held this for 6 years. Simon was also awarded three rosettes from the AA at Mallory, Inverlochy, and Seaham Hall in the north east. Other achievements include an Acorn ’30 under 30’ awarded by the Hotel and Caterer Magazine, Egon Ronay ‘Best Dessert in Scotland. I currently live in Leamington Spa with my family, Joshua, Zack and his wife Joanna, time off is mainly occupied watching the boys play rugby the occasional round of golf and a few cheeky trips out in my Caterham around the Warwickshire country side.
