Marvin J. Taylor, Director, Fales Library and Special Collections, New York University cofounded the Marion Nestle Food Studies Collection at NYU in 2001 with Marion Nestle. The collection contains more than 65,000 cookbooks, making it the largest in the United States. With Clark Wolf and Marion Nestle, Taylor edited 101 Classic Cookbooks, 501 Classic Recipes (Rizzoli, 2012), which looks at the past century of American cookbooks and recipes and the development of the American palate.
