It’s hard to single out one of Diana’s books as my favourite as they all bring something new and inspirational to the table. What is striking about Simple is the pleasure it has given to me, my family and friends. We all have our favourites, mine is the meaty pork chops, glistening in sticky Marsala juices and crowned with plump figs. This book lives up to its name with its simple ingredients and straight forward methods resulting in big flavours and memorable meals.

A new cookbook amongst an ageing collection, Diana Henry's latest is excellent for when I come home from picking the kids up and if I want to get something tasty on the table and quick. Not that everything is easy to make but results so far have been utterly delicious. I also really enjoy Diana's conversational style of writing.

So simple are these recipes that I managed to cook quite a few in a bothy in the Highlands shortly after the book came out. I cooked confidentially, despite a lack of tools, as Diana’s recipes never, ever fail. The pages are full of insights and humour and the cover is gloriously tactile, too.

Diana Henry is one of the British food scene's brightest stars - I always think it's a shame she's not better known. It's hard to pick a favourite of hers but I think Simple encapsulates what she does best - bold, exciting flavours, but very much from a home cook, rather than a cheffy, stance.
