Ariel Rosenthal is the Initiator and Vision of the award-winning book On the Hummus Route. He is also the chef and owner of the acclaimed restaurant Hakosem, a major culinary landmark in Tel Aviv for almost two decades, serving a menu primarily based on chickpeas.
